Vermicelli Noodles with Beef

This is one of my favorites dishes. It's comfort food to me. It's also a popular dish in all the Vietnamese restaurants. It's also really cheap and easy to make.


Makes 4 servings.

Ingredients:


  • 1 pkg. Rice (Vermicelli) Noodles (I use the thin noodles)
  • 1/2 lb. beef eye round (sliced thinly)
  • 1 bunch green onions
  • 1 red onion
  • 4 garlic cloves
  • Vegetable oil
Instructions:

-Cook the noodles until al dente. Let dry.





















-Mince the garlic, cut up red onion and green onions. For the green onions, cut up the white part in small pieces and green part in bigger segments and separate them. 

















-Heat 1 tbsp of oil in a wok (or frying pan)  on high heat. Put in half of the garlic and cook the beef ONLY. Cook the beef until it's slightly pink (about 2-3 minutes). Take meat off and put into a bowl.

















-In the same wok, put in a another tbsp of oil and put in the rest of the garlic, white part of green onions, and red onions. Cook until the garlic turns light brown. Add beef and the rest of the green onions, cook until the beef is done. 

















Serve over noodles. Add salt & pepper to taste... you can also add a little soy sauce/fish sauce to the noodles for more flavor if you'd like. This whole dish costed ~$7.50, about how much it would cost for one serving at a restaurant.
